What is gluten?
Gluten is found in wheat, rye & barley
It’s a mixture of hundreds of proteins which can be broken up between 2 classes? gliadin (give bread ability to rise during baking) and glutenin (gives dough’s elasticity).
It’s important to know that our modern day wheat products are not the same as those ancient grains
Over the years, we have been genetically selecting hardier wheat plants that produce gluten that can be dissolved in water and create fluffier pastries
Meaning, today’s wheat has a high gluten content that is heavily modified!
This modified gluten protein causes problems with both your gut g\health & immune system, creating a perfect storm for the development of & progression of inflammatory & autoimmune disease
